Almond-Soy Fruit Dip

Ingredients:

1/2 pound soft tofu
1/2 cup soy-based imitation sour cream such as the Tofutti® brand
2 tablespoons light brown sugar
1/2-1 teaspoon almond extract, to taste
1/3 cup sliced almonds
4 cups assorted sliced fruit such as peaches, strawberries, apples and pears

 

 

 

Directions:

Blend together tofu, imitation sour cream, brown sugar and almond extract in a blender.  Stir in almonds and transfer to a small serving bowl.  Serve with fruit.
