Healthy Jell-o Cake with Fruit

1 box yellow or white cake mix
¼ c unsweetened, light applesauce
1 ¼ c water
3 egg whites in place of whole eggs
Combine ingredients until mixture is smooth. Pour into greased and floured pan and bake as directions state on the mix’s box. Bake and let cool for 10-15 minutes.
While cake is baking, prepare one box on sugar-free jell-o, any flavor, as directed on box. DO NOT REFRIDGERATE.
When cake is slightly cooled, poke holes throughout with fork and pour jell-o over cake.
Refrigerate cake for at least 1 ½ hours or until ready to serve. To lower fat content, do not add icing. Cover top of cake with fresh fruit.
Fat intake per slice is reduced to 4 grams.
By avoiding frostingand incorporating a serving or more of fruit per cake slice, fat and calories are significantly decreased.
