Ingredients: |

1 1/2 cups fat-free or low-fat yogurt |
|
|
|
|
|
1/3 cup confectioners'
sugar |
|
|
|
|
|
2 teaspoons grated lemon
or orange zest |
|
|
|
|
|
2 tablespoon fresh lemon
or orange juice |
|
|
|
|
|
3/4 teaspoon vanilla
extract |
|
|
|
|
|
1 cup fat-free or
low-fat granola |
|
|
|
|
|
2 cups blueberries and
quartered strawberries |
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
Directions: |
|
|
|
|
|
|
|
|
|
|
|
In a medium bowl, whisk
together yogurt, confectioners' sugar, lemon zest, lemon |
|
|
|
|
|
juice, and vanilla until sugar is completely
dissolved. |
|
|
|
|
|
Spoon two tablespoons
granola, 1/4 cup blueberries and strawberries, and 1/2 cup |
|
|
|
|
|
yogurt mixture into wine goblet or parfait cup. |
|
|
|
|
|
Top with remaining two
tablespoons granola, 1/4 cup berries. Serve immediately. |
