Lemony Sunrise Parfait

Ingredients:

 

 

 

 

 

 

 

 

 

1 1/2 cups fat-free or low-fat yogurt

 

 

 

 

1/3 cup confectioners' sugar

 

 

 

 

2 teaspoons grated lemon or orange zest

 

 

 

 

2 tablespoon fresh lemon or orange juice

 

 

 

 

3/4 teaspoon vanilla extract

 

 

 

 

1 cup fat-free or low-fat granola

 

 

 

 

2 cups blueberries and quartered strawberries

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Directions:

 

 

 

 

 

 

 

 

 

In a medium bowl, whisk together yogurt, confectioners' sugar, lemon zest, lemon

 

 

 

 

juice, and vanilla until sugar is completely dissolved. 

 

 

 

 

Spoon two tablespoons granola, 1/4 cup blueberries and strawberries, and 1/2 cup

 

 

 

 

yogurt mixture into wine goblet or parfait cup.

 

 

 

 

Top with remaining two tablespoons granola, 1/4 cup berries. Serve immediately.
