Cherry Tomato Salad
Ingredients:
1 pint cherry tomatoes, halved
1 ½ cups unsalted mozzarella, diced
½ cup basil, chopped
3 cloves garlic, chopped
1 cup red onion, chopped
½ cup balsamic vinegar
½ cup olive oil
pepper to taste
Directions:
Combine all the ingredients except the basil into a bowl and stir to combine. Let the salad sit in the refrigerator for one hour. When ready to serve, transfer the salad to a platter and lay the basil over the salad. Serve with bread. 6 Servings
