Mikki Meadows, Ph.D.

Linda Simpson, Ph.D., Consumer Affairs Specialist, is an Associate Professor in the School of Family and Consumer Sciences at Eastern Illinois University. She has over 35 abstracts and articles published and has presented at international, national, state, and local conferences on topics such as consumerism and online teaching and learning.

Pat McCallister, Ph.D., Professor in Family and Consumer Sciences teaches both undergraduate and graduate inclass and online courses in consumer studies, resource management, housing, research methods and consumer technology. Special research interests are international studies where she has taught, completed research and given presentations in Japan, China, Costa Rica, Malaysia, France, Switzerland and Germany. Other research interests include consumer ethics and The Amish. She has previously taught at Georgia College and State University and Bowling Green State University. She has received seven Eastern Illinois University Faculty Excellence Awards for Service, three AHEE Education Program Paper Awards, one AHEE Research Paper Award, The IATC Best Presentation Award and numerous grants.
