Assignments
Nutrition Education Program (225 points)
In pairs, design and develop a nutrition education program for a specific target audience. The components of this activity will be due at different times:
a. Email
your pair's idea to Dr. Burns by September
17, 2008.
b. Your pair's Program Prospectus (75
points) is due on October 1, 2008.
c .
Implement the program, collecting the evaluation data, and noting any
observations.
d. Present your program in a poster presentation (50 points), including
an abstract following SNE guidelines during
the final weekend.
e. Identify at least 10 websites or blogs educating consumers
about nutrition. If possible, find blogs and websites that are appropriate for your program's target audience. For each, write a short (2-3 sentence) annotation (summary)
including the purpose and uses. Share your top 2-3 sites during class during
the second weekend. (25 points)
f. Submit your GEMS article
(75 points) following the specified GEMS
Guidelines during our last weekend.
GEMS
Review (50 points)
a. Locate,
read, and review 15 GEMS as published in the Journal of Nutrition Education
and the Journal of Nutrition Education and Behavior.
b. Using the approved form, annotate each GEM.
c. Submit for grade (grading rubric) and
be prepared to discuss in class during the second weekend.
Marketing Nutrition (75 points)
In groups of three (different members than program pairs), brainstorm an idea for a product/service related to foods and nutrition to market. Develop a media kit to market your product/service to include:
a. A statement of rationale
for the need/importance of your product/service, including supporting literature
and marketing plan. Will need a minimum of 10 references.
b. Identify a potential funding source and describe why this source would
be appropriate.
c. Develop a prototype of the product, if appropriate.
d. Develop a media kit to include a written press release, a pitch letter,
and at least three other components.
e. Enter class contest by displaying your media kit and prototype during
class the third weekend.
The project will be evaluated based on the criteria listed in this grading rubric.
Nutrition Education in Print (76 points)
In a group of 3, critically evaluate 2-3 children's story books using the evaluation criteria presented in class. In narrative form, discuss the value of the story books you evaluated. Based on the needs of your identified target age group, write a story, including possible illustrations, related a food and/or nutrition topic. During our third weekend, you will read your story and provide a brief justification for why you chose the topic and storyline you did.
Examinations (50 points)
Two objectives
exams will be administered...one in weekend 2 covering material from weekend 1,
and the other exam during weekend 3 covering material from weekend 2. The first exam has 25 multiple choice questions from the following topic areas: introduction, theory bases, marketing, goals and objectives. The second exam has 25 multiple choice questions from the following topic areas: designing a lesson plan and effective nutrition education interventions for members of various age groups; evaluation, especially the different types of evaluation; writing effective nutrition messages; and professional communication.
