James Roche graduated from Illinois State University in 2010 with a Bachelor’s of Science in Family & Consumer Sciences, dietetics concentration with a Spanish Minor.  From there, he was accepted into Eastern Illinois University’s dietetic internship through which he worked at the VA Illiana Health Care System as a dietetic intern.  His thesis examined the acceptability of vegetarian burgers among college students.  He graduated with a Master’s of Science in June of 2012. 

Mr. Roche started work at a small public health company in Rock County, WI where he worked with the WIC program, performed dietetic services for 3 long-term care facilities, conducted sanitation inspections and provided dietary information for 2 Council on Aging programs.  He was then hired to his current position as an instructor for the School of Family & Consumer Sciences with Eastern Illinois University.
